Garic and Herb-Crusted Sirloin Steaks

Herb Crust:
3 tablespoons butter, softened
½ tablespoon Dijon or whole-grained mustard
6-8 cloves finely minced garlic (Garlic paste can also be used)
1 tablespoon finely sliced fresh chives
1 tablespoon minced fresh flat-leaf parsley
¼ cup fine bread crumbs
Salt
Fresh ground black pepper

Steaks:
4 Sirloin Steaks
Salt
Freshly ground black pepper
2 teaspoons olive oil

Mix together the butter and mustard in a mixing bowl. Add the chives, garlic, parsley, bread crumbs, salt, and pepper, and mix into a paste.

Preheat the broiler and place the rack in the middle of the oven.

Season the steaks with salt and pepper. Heat the oil in a skillet and sear the steaks over high heat for 1 to 2 minutes per side. Remove the steaks and place the herb crust on one side only of each steak. Transfer to the broiler and cook crust side up for about 8 minutes for medium-rare (do not turn the steaks over). For medium, sear in the skillet for 2 to 3 minutes per side, add the herb crust, and broil for about 10 minutes. In either case, the crust should turn brown and dissolve a little.

To serve, cut each steak into 3 or 4 slices. Serve with wild rice or mashed potatoes. Best if served immediately

Coffee-Crusted Sirloin with Red-Eye Gravy

1/2 cup ground coffee beans
1/4 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon salt
4 (4-ounce) all-natural sirloin steaks, trimmed
1 teaspoon canola oil
1 cup brewed coffee
1 cup beef stock
1 tablespoon brown sugar
1 tablespoon lemon juice
2 teaspoons cornstarch, dissolved in a little additional coffee

Combine 1/2 cup ground coffee, garlic powder, pepper and salt in a flat-bottom soup bowl or pie plate. Dredge the steaks in the mixture, coating both sides.

Heat the canola oil in a cast-iron skillet with an ovenproof handle over high heat. Spray the steaks with nonstick cooking spray. Sear the steaks in the skillet, turning to sear both sides.

Transfer the skillet to a 450°F oven to finish cooking the steaks to the desired doneness. Remove the skillet from the oven; transfer the steaks to a plate and keep warm.

Combine 1 cup brewed coffee and the stock in the hot skillet, stirring with a wooden spoon to incorporate all the brown bits. Cook over medium-high heat until the liquid is reduced to 1 cup. Add the brown sugar, lemon juice, cornstarch mixture and any accumulated juices from the steaks; mix well.

Serve the gravy over the steaks.

While down in San Diego yesterday, I was able to get to [livejournal.com profile] caprine a new object for her Devil Duck collection that I had picked up at Archie McPhee's.

And in return, she gave me a new movie for my bad movie collection. One I had only heard of, but not seen. But one that scores *almost* as bad at IMDB as "Barn of the Blood Llama"

I am talking about the 25th anniversary, remastered, now in stereo, version of "A Polish Vampire in Burbank".

AND it includes a short documentary on the making it, narriated by Forrest Ackerman!

So, anyone want to brave this one with me???
