Vegetarian Scotch Eggs

Ingredients

5 hard-boiled eggs
1 cupful of breadcrumbs
1 large onion
1 tspn of dried chopped sage
1 dessertspn of finely chopped parsley
1 egg
1 oz. of butter
pepper and salt to taste, some oil
vege-butter, or butter for frying
Method

Grate or finely dice the onion, melt the butter, beat the raw egg and mix them all together with the breadcrumbs, herbs, and seasoning. This is our vegetarian forcemeat.

Beat the forcemeat smooth.

Shell the boiled eggs, cover them completely with a thick layer of forcemeat, having a little flour on your hands may help with this.

Then fry them a nice brown.

Eh. The vegetarian's not too bad, really just egg mcnuggets. I can do that.

But the vegan... no.
