(Note: I don't much care for Cincinnati-style "chili", but I know a few people who like it.)

Cincinnati "Chili" Recipe
Ingredients
2 tbsp oil
2-1/2 pounds ground beef
1 quart cold water
1 (6-ounce) can tomato paste
2 large onions (diced)
1-1/2 tbsp vinegar
1 tsp Lea & Perrin Worcestershire sauce
1 clove garlic (crushed)
2 tbsp chili powder
5 bay leaves
2 tsp cinnamon
1 tsp allspice
2 tsp cayenne pepper
1-1/2 tbsp unsweetened cocoa
Salt & pepper to taste

Instructions
In a heavy guage pot, heat oil, add beef until brown, add onions and water and bring to a boil. Reduce to a simmer and add tomato paste and all other ingredients and let simmer 1-1/2 to 2 hours. Adjust with salt & pepper to taste. Remove bay leaves before serving.

In Cincinnati the true enthusians have their Chili 1 to 5 ways:

1. Plain 2."Two Way" - Spaghetti & Chili
3."Three Way" - Chili, Spaghetti, and Cheddar Cheese
4."Four Way" - Chili, Spaghetti, Cheddar Cheese, and Onions
5."Five Way" - Chili, Spaghetti, Cheddar Cheese, Onions and Kidney Beans

Yield: 6 to 8 servings

(chuckle) Notice the fact that I said "I don't care for it".

As in "No way would I eat this stuff". Still, I know some poor lost souls that actually like this stuff, so I posted the recipe.

See now, that sounds yummy to me. I'm all for bean-less chili. (well, except for my green chicken chili.)

I'm gonna have to try this. I wonder if it would work in the crock pot. If I browned up the beef before hand and just put it all on low. hrmmmm

(We're gonna be prepping for war all week - crock pot meals will be a good thing this week.)

Well, I'm a firm believer that a real chili doesn't have beans in it anyway. (True Texas-style chili doesn't have beans cooked in it. You're supposed to make the beans on the side, and then add as little or as much as you want when you eat it.)

The few times I've had Cinncinati-style "chili", I've been underwhelmed by it. But I know a lot of people that do like it. :-)
