Cajun Coconut Spam Fritters
Ingredients
- 1 SPAM® Classic (12-ounce)
- 1 1/2 cups complete pancake mix
- 2 teaspoons Cajun seasoning
- 1 cup milk
- 1 1/2 cups shredded coconut
- Sweet & sour sauce for dipping
Servings: 32
Prep Time: 15 minutes
Cook Time: 30 minutes
Directions
Preheat oven to 375ºF.
Cut SPAM® into 32 spears.
Place wooden toothpick lengthwise into each spear.
In bowl, combine pancake mix and cajun seasoning, gradually add milk, stirring until smooth.
Dip each spear into batter, roll in coconut until lightly coated. Place on lightly sprayed baking sheet.
Bake for 10-13 minutes, turning halfway through baking, until golden brown and batter is cooked through.
Serve warm fritters with sweet & sour sauce on the side for dipping.
Makes 32 appetizer servings.

Date: 2007-03-13 11:50 pm (UTC)Oh, and I'd probably toss the SPAM sticks into a dry skillet to brown up and render off a bit before rolling them in the batter.
But really.... I'd totally make this recipe!
