Sausage-Filled Prunes
1 1/2 cups cooked prunes
1 pound bulk sausage
1/2 green sweet pepper, finely chopped
1/4 cup parsley, finely chopped
1 hard-cooked egg
Slit prunes on one side and remove pits. Fry sausage and break into small pieces, drain off the fat. Mix sausage with green pepper and parsley.
Fill prunes with the mixture and lay in a greased pan. Dot the top of each with about 1/2 teaspoon of the sausage fat.
Bake 10 minutes in a 375 degree oven.
Press the yolk and white of egg though a sieve seperately and garnish prunes after removing from oven.
Serve hot. Platter may be garinished with thin rings of pepper with a prune placed in each. Allow 4 prunes to a serving.

Now, there's a combination I've not heard in a long, long time.
Remind me to avoid being anywhere near you between 4 and 12 hours after you've had these.

Date: 2007-08-29 09:18 pm (UTC)I am also reminded (not sure why, cuz except for stuffed fruits, there's no similarity) of some lovely chocolate-covered, almond stuffed dates I had once. Those were mighty tasty too. :)
