Turkey Spam & Asparagus in Curry Sauce
Ingredients
* 1-1/2 lbs. fresh asparagus spears
* 1 (12-ounce) can Spam Oven Roasted Turkey
* 1/4 teaspoon pepper
* 1 can reduced salt condensed cream of chicken soup
* 1/2 cup mayonnaise
* 1 teaspoon lemon juice
* 1/2 teaspoon curry powder
* Cayenne pepper to taste
* 1 cup shredded Cheddar cheese
* 1/4 cup slivered almonds, toasted
Directions:
Preheat oven to 375°. Partially cook asparagus; drain and cut into bite size pieces. Arrange asparagus in a greased quiche pan.
Cut SPAM into bit size pieces and brown in a non-stick skillet. Sprinkle SPAM with pepper and arrange over asparagus.
In a bowl, mix soup, mayonnaise, lemon juice, curry powder and cayenne pepper; pour over SPAM.
Bake at 375° for 30 minutes. Sprinkle with cheese and almonds. Serves 8.
