Spam Ratatouille Pie
Ingredients
- 2 zucchini (1 pound)
- 1 eggplant (1 pound) cubed
- 3 tablespoons cooking oil
- 1 large green pepper seeded and coarsely chopped
- 1 large onion coarsely chopped
- 2 cloves garlic minced
- 1 large tomato peeled and coarsely chopped
- 1/2 teaspoon thyme
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 bay leaf
- 1 Spam Classic (7-ounce) can diced
- Pastry for 2-crust 9-inch pie
Directions
Halve zucchini lengthwise; cut into 1-inch pieces. In large skillet, saute eggplant and zucchini in oil 5 minutes, stirring often.
Mix in green pepper, onion, and garlic; cook 5 minutes, stirring often. Mix in tomato, thyme, salt, pepper, and bay leaf.
Cover and simmer 15 minutes. Add Spam; cook, uncovered, 15 minutes longer. Let cool slightly.
Roll out half of pastry to fit 9-inch pie plate; fill with SPAM® mixture.
Cover with remaining pastry; seal and flute edges. Make several slits in top crust.
Bake in 425°F oven 20 minutes. Lower heat to 375°F and bake 15 minutes longer, or until lightly browned.
