This is from yesterday's Seattle Post-Intelligencer. Actually sounds pretty good to me, minus the green bell pepper, and maybe using garlic tabasco in place of regular.

Cajun Meatloaf

Ingredients:

1 pound ground beef
1/2 pound andouille sausage, casings removed, crumbled
1/2 cup chopped yellow onion
1/2 cup chopped green bell pepper
2 garlic cloves, minced
3/4 cup dried bread crumbs
1/2 cup whole milk
1 large egg, lightly beaten
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco or other hot-pepper sauce
1/2 teaspoon ground cumin
1/2 teaspoon paprika

Preheat oven to 350 degrees.

In a large bowl, combine all the ingredients and mix well. Turn the mixture into a lightly sprayed or oiled 9-by-5-inch loaf pan and gently pat down.

Bake until the loaf is firm and the top is lightly browned, about an hour. Let stand in the pan for 5 to 10 minutes before serving. Remove the loaf from the pan and slice to serve.

Serves: 6

Prep time: 10-15 minutes

Cook time: 1 hour, plus 5 to 10 minutes to stand

Bell pepper is part of the "trinity" which defines Cajun cookery, so maybe don't nix it entirely. I like a little red bell pepper chopped as a CONDIMENT, but not as a Vegetable, if you take my meaning. Maybe add some celery, the leafy end, and complete the Cajun Trinity while you're at it. At least they remembered onions.


Agreed about garlic of course.

Problem is a) I don't like bell pepper, and b) we have one person here who's allergic to them.

Otherwise I agree completely. :-)
