1 1/4 pounds beef heart
1 medium onion
1/2 cup quick-cooking rolled oats
1 1/2 teaspoons salt
1/2 teaspoon pepper
All-Purpose Flour
2 tablespoons fat
1 1/2 cup water
Wash and trim heartm and remove large tubes, excess fat, and blood vessels. Force heart and onion though food grinder, using fine blade. Add oats, salt, and pepper. Let stand for at least 30 minutes. Then, with well-floured hands, shape mixture into 8 thin pattiesm coating each patty with flour.
Brown slowly on both sides in hot fat. Remove patties and keep hot. Blend 1 1/2 tablespoons flour into drippings remaining in skillet. Add water and cook until thickened. Season with additional salt and pepper if necessary. Serve as a sauce with the patties. Makes 4 servings.
