seattlejo), I tried a recipe I've been wanting to make.
Namely "Cajun Meatloaf".
The base recipe was pretty straight forward, but I did want to do some tweaking of it to fit household tastes and allergies. The changes were:
Removed the green bell peppers and celery
Used salted butter
Increased the onions to one cup
Increased the green onions to 1/2 cup
3 tablespoons of minced garlic
I used garlic tabasco instead of regular, because I like the milder taste of it. Also used asian fish sauce rather than worcestershire.
Two mistakes I made though. The recipe called for 1 tablespoon of tabasco and 1 tablespoon of worcestershire. I was going to double both but accidently used a teaspoon rather than a tablespoon.
The results??

Here's an almost intact shot of the loaf. I was going to get a couple pictures of the slices, but.......

As you can see, it was a hit. (smile)
Things I want to change next time. Add one more egg as a binder. Maybe try sourdough crumbs sometime. Oh, and double the recipe. Yep, double the recipe.
