The July 2004 issue of MacWorld has a recipe in it from Good Eats host Alton Brown.

It's for Apple Macaroni and Cheese, and is a mixture of Sauteed Apples, Gorgonzola, Cheddar, and Parmesan cheese, mixed with Penne Pasta.

It's on page 28, if anyone is interested.

I'm a big fan of the M&C but you lost me at the Gorgonzola. Blech.

I recently picked up a whole book full of gourmet versions of Mac & Cheese, if you want to see it sometime.

Personally, I don't do M&C,much (too many years of my family making Kraft pre mix killed my taste buds for such), but I was wondering how something like Montery Jack or Motzerella would work in place of the Gorgonzola. Gorgonzola has too strong a taste for me.

And how would a smoked cheddar work for it???

Gorgonzola is a crumbly cheese, right? I'd say use any of the others, pre-shredded and stir like crazy while heating gently, so it melts into the other sauce ingredients.

I used to make M&C with gouda and two types of cheddar, with a noodle I've only seen in Canada called a Scoobi-Do. It was like an elbow macaroni except with a single twist. Worked really well.

My guess is the gorgonzola is there to balance the sweetness of the apple. Doesn't appeal to me, though, and I'm a huge M&C fan. (Not the boxed stuff though, even though it's Canadian as maple sugar.)

I think I will chime in as sole Gorgonzola fan - sounds yummy to me, I'd like to try it.
