Yup, ditch the mayo though and minimal catsup/ketchup/catsoup/however you want to spell it. Crispy fries with onions and satay sauce sounds good to me.

The Indonesian original, Kecap, a sweet dark sauce not unlike teriyaki glaze, could make a tasty additive to this version, however!

Hmm, a pommes frites party. Two deep fryers at different temps to double fry them Belgian style and a table with various condiments ranging from the standard catsup or malt vinegar to the satay. Everyone brings a potato and a dipping sauce but no one is allowed the ordinary obvious ones.
