Corn prices making Coke gulp
"Coca-Cola may investigate alternatives to high fructose corn syrup, its main sweetener in the U.S. market, because of high corn prices, a company executive said Monday."
Okay, I mostly drink Diet Coke anyway. But I did have the occasonal bottle of cane sugar coke in Doha, and have been known to do the same in Canada.
It's funny. In a year in the Middle East, I got used to not having stuff with HFCS in it. Now, I'm finding a lot of food here in the US tastes too sweet and cloying

Sunday Little Bit and I stopped at the Eagle Rock Mall.

With my idiot namesake's day coming up on the 17th, I figure I should give a recipe appropriate for the day
Vegan Colcanon
* 2 medium potatoes, scrubbed
* 1 cup kale, stems removed and coarsely chopped
* 2/3 cup low-fat soymilk
* 3 tablespoons thinly sliced scallions
* salt and pepper to taste
Cut potatoes into large chunks. Add to a medium saucepan with enough water to cover the potatoes. Bring to a boil, reduce heat cook until tender when pierced with a fork—about 20 minutes.
Meanwhile, add about one inch of water to a medium saucepan. Insert steamer basket, bring to a boil then reduce heat to simmer. Add kale, cover, and steam for about 4 minutes. Remove kale and place in a mixing bowl.
Once potatoes are cooked, peel and add to kale.
In a small skillet, heat the soymilk and scallions, and simmer 5 minutes. Add to potatoes and kale and mash together. Add salt and pepper to taste. Serve hot.

Ingredients
- 1 SPAM® Classic (12-ounce)
- 1 1/2 cups complete pancake mix
- 2 teaspoons Cajun seasoning
- 1 cup milk
- 1 1/2 cups shredded coconut
- Sweet & sour sauce for dipping
Servings: 32
Prep Time: 15 minutes
Cook Time: 30 minutes
Directions
Preheat oven to 375ºF.
Cut SPAM® into 32 spears.
Place wooden toothpick lengthwise into each spear.
In bowl, combine pancake mix and cajun seasoning, gradually add milk, stirring until smooth.
Dip each spear into batter, roll in coconut until lightly coated. Place on lightly sprayed baking sheet.
Bake for 10-13 minutes, turning halfway through baking, until golden brown and batter is cooked through.
Serve warm fritters with sweet & sour sauce on the side for dipping.
Makes 32 appetizer servings.
